Looking for a quick, healthy mid-week dinner? Stuffed bell peppers are an easy go-to!
For two people I used 4 bell peppers which is just enough for dinner but no left overs…
First thing, I season one pound lean ground turkey with: smoked paprika, salt, garlic powder, cumin. Allow meat to season for approx 30 min. *Tip: if you don’t have all these spices on hand i recommend Mrs. Dash Fiesta seasoning.
Also: Start quinoa at this time, if not already pre-cooked.
Next cut tops off bell peppers and de-seed. Save tops.
Sauté turkey in skillet or frying pan over medium heat until browned.
Next, combine canned ingredients in large bowl, allow room for adding quinoa and turkey.
Combine turkey & quinoa with previously mixed ingredients.
Fill bell peppers with the combined ingredients & adding cheese. I enjoy making multiple levels of cheese, so yummy!
Bake at 350 degrees for 15-20 minutes.
Finally I top with chopped red onion, cilantro & lime juice.
