Stuffed Bell Peppers

Looking for a quick, healthy mid-week dinner? Stuffed bell peppers are an easy go-to!


For two people I used 4 bell peppers which is just enough for dinner but no left overs…



First thing, I season one pound lean ground turkey with: smoked paprika, salt, garlic powder, cumin.  Allow meat to season for approx 30 min. *Tip: if you don’t have all these spices on hand i recommend Mrs. Dash Fiesta seasoning.

Also: Start quinoa at this time, if not already pre-cooked.

IMG_5389Next cut tops off bell peppers and de-seed. Save tops.IMG_5391

Sauté turkey in skillet or frying pan over medium heat until browned. IMG_5379

Next, combine canned ingredients in large bowl, allow room for adding quinoa and turkey.IMG_5382

IMG_5392Combine turkey & quinoa with previously mixed ingredients.

IMG_5394Fill bell peppers with the combined ingredients & adding cheese. I enjoy making multiple levels of cheese, so yummy! IMG_5397

Bake at 350 degrees for 15-20 minutes. 


Finally I top with chopped red onion, cilantro & lime juice.
