This delicious prosciutto wrapped lemon chicken was the feature for our at home date night, served with baked rosemary potatoes & my go to dinner salad. This was the first time this recipe debuted, and it was too good not to share.
First I marinated the chicken with olive oil, garlic salt, Trader Joe’s everyday seasoning & zest from one lemon. If the chicken breasts are thick you can slice them in half to help them cook quicker. Next, I chopped 1/2 onion, 1/2 bunch of asparagus into 2″ pieces, & 6 -10 white mushrooms.
In a large skillet over medium heat, I sautéed 1tbsp olive oil, the chopped onion & Trader Joes Frozen Garlic Cubes. I love garlic so I used 6 cubes, you can always add more cubes to the dish as the chicken is cooking if you want to add more garlic flavor.
Once the garlic & onions have sautéed for about 3 minutes I added the chicken & placed the asparagus around the cooking chicken, flipping the chicken after about 4 minutes or until nicely browned.
Once the chicken has browned on each side, turn the heat to medium low & add 1/3 cup cream & 1/4 cup basil pesto. I also added about 4 cubes of Trader Joes frozen basil. I let the sauce cook for approximately 2-3 minutes & then serve immediately.
