Peanut Butter Protein Bites

This past week I added these Peanut Butter Protein Bites to the meal prep & they turned out great, not to mention they’re super easy to make & loaded with protein.

Ingredients:

1/2 cup peanut butter

1/2 cup honey

1/2 tsp vanilla

3 cups quick oats

1/4 tsp salt

1 tsp cinnamon

3 tbsp chia seeds

Directions:

  1. Melt peanut butter & honey. I microwaved it for about 45 seconds. Then add vanilla.
  2. Add the dry ingredients and mix thoroughly until combined.
  3. Scoop out heaping teaspoon and roll into tight balls.
  4. Put in freezer for about 5-10 minutes to let them set.

*I actually forgot to add salt so instead I used the salt grinder over the bites before I put them in the freezer & I actually think I prefer it that way!

I love this recipe because it’s super easy & delicious, not to mention you can add in different ingredients to create variety. A few add in options are: dried fruit, chocolate chips, chopped nuts. I used chunky peanut butter so there’s a little crunch in mine. This recipe makes about 20 or so protein balls depending on the size you make them. I love these because they’re a great grab and go snack and are so much healthy than grabbing something out of a vending machine when you’re in a jam. I separated them out into different tupperware containers so Chris could take enough for the whole week to work. These are definitely going to become a staple when I meal prep for the week.
