This past week I added these Peanut Butter Protein Bites to the meal prep & they turned out great, not to mention they’re super easy to make & loaded with protein.
1/2 cup peanut butter
1/2 cup honey
1/2 tsp vanilla
3 cups quick oats
1/4 tsp salt
1 tsp cinnamon
3 tbsp chia seeds
- Melt peanut butter & honey. I microwaved it for about 45 seconds. Then add vanilla.
- Add the dry ingredients and mix thoroughly until combined.
- Scoop out heaping teaspoon and roll into tight balls.
- Put in freezer for about 5-10 minutes to let them set.
*I actually forgot to add salt so instead I used the salt grinder over the bites before I put them in the freezer & I actually think I prefer it that way!
I love this recipe because it’s super easy & delicious, not to mention you can add in different ingredients to create variety. A few add in options are: dried fruit, chocolate chips, chopped nuts. I used chunky peanut butter so there’s a little crunch in mine. This recipe makes about 20 or so protein balls depending on the size you make them. I love these because they’re a great grab and go snack and are so much healthy than grabbing something out of a vending machine when you’re in a jam. I separated them out into different tupperware containers so Chris could take enough for the whole week to work. These are definitely going to become a staple when I meal prep for the week.
